Carne asada usually means a long marinade and a grill. This skillet version uses a quick citrus-garlic rub on thinly sliced steak so it sears hard in a hot pan, stays juicy, and still tastes bright and charred.

Rice bowls keep dinner flexible: warm grains, sliced steak, and cold toppings you can pull from the fridge. One 12-inch skillet handles the meat; everything else is assembly.
Ingredients
Steak
- 1¼ lb (567 g) flank steak or skirt steak
- 2 Tbsp (30 ml) olive oil, divided
- 2 Tbsp (30 ml) fresh lime juice
- 1 Tbsp (15 ml) orange juice (or extra lime)
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- ¾ tsp kosher salt
- ½ tsp smoked paprika
- ½ tsp black pepper
- ¼ tsp dried oregano
Bowls
- 4 cups cooked white rice or cilantro-lime rice
- 1 cup (165 g) frozen or canned corn, warmed
- 1 can (15 oz / 425 g) black beans, rinsed, drained, and warmed
- 1 cup (180 g) pico de gallo or diced tomato
- 1 avocado, sliced
- ¼ cup (60 g) sour cream or Mexican crema
- ¼ cup (10 g) chopped cilantro
- Lime wedges
- Crumbled cotija or shredded cheddar, optional
Method
- Pat the steak dry. In a bowl, mix 1 Tbsp olive oil, lime juice, orange juice, garlic, cumin, chili powder, salt, smoked paprika, pepper, and oregano. Coat the steak; marinate at room temperature 10 minutes (or refrigerate up to 4 hours).
- Heat the remaining 1 Tbsp oil in a 12-inch skillet over high heat until just smoking. Add the steak; sear 3–4 minutes per side for medium-rare (135°F / 57°C) or to your preferred doneness. Transfer to a cutting board; rest 5 minutes.
- While the steak rests, warm rice, corn, and beans.
- Slice steak thinly against the grain.
- Divide rice among bowls. Top with steak, corn, beans, pico, avocado, sour cream, cilantro, cheese if using, and lime.
Cook’s note
High heat and a dry surface are what give you char without steaming. If the steak is thick, butterfly it or pound lightly so it cooks evenly in under 10 minutes. Leftover grilled corn from another night is excellent here.
What to serve with it
Tortilla chips and salsa, pickled jalapeños, or a simple shredded cabbage slaw with lime. Warm flour tortillas on the side if anyone wants tacos instead of bowls.
Make-ahead and leftovers
Mix the marinade and cook rice up to 1 day ahead. Slice and sear steak just before serving. Leftover steak keeps 3 days; reheat briefly in a hot skillet so it does not toughen. Pack toppings separately for lunches.
Troubleshooting
Steak gray and steamed? Pan was crowded or not hot enough — cook in two batches if needed. Too chewy? Slice thinner and against the grain. Underseasoned? A pinch of salt and extra lime on the sliced meat usually fix it.
