Skillet Elote Street Corn Chicken

Skillet elote street corn chicken folds juicy chicken into creamy chili-lime corn with cotija in about 30 minutes. Mexican street-corn flavors, one pan.

Skillet Elote Street Corn Chicken

Elote is the best part of a cookout, and it translates cleanly to a skillet dinner. Corn chars in the pan, chicken sears with chili and lime, then a quick crema of mayonnaise, sour cream, cotija, and chili powder turns the whole thing into scoopable street-corn energy with protein built in.

Eat it in bowls over rice or pile it into warm tortillas. About 30 minutes, and every bite tastes like summer on a Tuesday.

Ingredients

  • 1 Tbsp (15 ml) olive oil
  • 1 lb (454 g) boneless skinless chicken breasts or thighs, cut into ¾-inch pieces
  • ¾ tsp kosher salt, divided
  • ½ tsp black pepper
  • 1 tsp chili powder, divided
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • 3 cups (495 g) frozen corn (no need to thaw) or fresh kernels
  • 2 garlic cloves, minced
  • 2 Tbsp (30 g) mayonnaise
  • 2 Tbsp (30 g) sour cream or Mexican crema
  • 1 Tbsp (15 ml) fresh lime juice, plus wedges for serving
  • ½ cup (60 g) crumbled cotija or feta
  • 2 Tbsp chopped cilantro
  • Pinch of cayenne or Tajín, optional
  • Cooked rice or warm tortillas, for serving
  • Avocado, optional

Method

  1. Heat oil in a 12-inch skillet over medium-high. Season chicken with ½ tsp salt, pepper, ½ tsp chili powder, smoked paprika, and garlic powder. Cook 5–6 minutes until browned and cooked through. Transfer to a plate.
  2. Add corn to the skillet (add a teaspoon of oil if the pan looks dry). Cook undisturbed 2–3 minutes to char, then stir and cook 3–4 minutes more until blistered in spots. Stir in garlic 30 seconds.
  3. Return chicken. Lower heat to medium-low. Stir in mayonnaise, sour cream, lime juice, remaining ¼ tsp salt, and remaining ½ tsp chili powder until creamy and hot, 1–2 minutes.
  4. Off heat, fold in most of the cotija and cilantro. Taste for salt and lime.
  5. Top with remaining cheese, cilantro, cayenne or Tajín if using. Serve over rice or in tortillas with avocado and lime.

Cook's note

Frozen corn chars surprisingly well in a hot dry-ish pan — do not thaw or it steams. Cotija is classic; feta is the grocery swap that still gives you salty crumble.

What to serve with it

Cilantro-lime rice, tortilla chips, or a simple shredded lettuce salad. Black beans on the side make it a fuller taco spread.

Make-ahead and leftovers

Cook chicken and char corn up to 2 days ahead; finish with the crema just before serving. Leftovers keep 3 days; reheat gently so the sauce does not separate. Freezing is okay for 1 month before adding dairy.

Troubleshooting

**Sauce greasy or broken?** Heat was too high — stir crema in on low. **Corn pale?** Pan needed more time undisturbed for char. **Too mild?** Extra chili powder, Tajín, and lime at the end.
