Honey Garlic Salmon and Green Beans

Cook honey garlic salmon and green beans in one skillet in 25 minutes. Sticky glaze, crisp-tender beans, and no extra pans for weeknight dinners at home.

Salmon cooks in minutes, which is the whole point on a weeknight. This skillet gets a quick honey-soy glaze that reduces while the fish finishes, and the green beans go in first so they stay snappy instead of soggy.

Ingredients (serves 4)

  • 4 salmon fillets, 5–6 oz (140–170 g) each, skin on or off
  • ¾ tsp kosher salt, divided
  • ½ tsp black pepper
  • 12 oz (340 g) fresh green beans, trimmed
  • 1 Tbsp (15 ml) olive oil
  • 1 Tbsp (14 g) unsalted butter
  • 3 Tbsp (63 g) honey
  • 2 Tbsp (30 ml) low-sodium soy sauce
  • 1 Tbsp (15 ml) rice vinegar or apple cider vinegar
  • 3 garlic cloves, minced
  • 1 tsp grated fresh ginger (or ¼ tsp ground ginger)
  • ½ tsp red pepper flakes (optional)
  • 1 tsp toasted sesame seeds (optional)
  • Lemon wedges, for serving

Method

  1. Pat the salmon dry. Season the flesh with ½ teaspoon salt and the pepper.
  2. Whisk the honey, soy sauce, vinegar, garlic, ginger, and red pepper flakes in a small bowl. Set aside.
  3. Heat the olive oil in a 12-inch skillet over medium-high heat. Add the green beans and the remaining ¼ teaspoon salt. Cook 4 minutes, stirring often, until blistered in spots but still firm.
  4. Push the beans to the edges of the pan. Add the butter to the center. When it foams, place the salmon in the skillet skin-side down (or presentation-side down if skinless).
  5. Cook the salmon 4 minutes without moving it, until the underside is golden.
  6. Flip the fillets. Pour the glaze around (not over) the fish so it hits the hot pan. Tilt the skillet and spoon the bubbling glaze over the salmon.
  7. Cook 3–5 minutes more, until the salmon flakes and the thickest part reaches 125–130°F (52–54°C) for medium. The glaze should look sticky, not watery.
  8. Scatter sesame seeds over the top. Serve the salmon and beans with extra glaze from the pan and a lemon wedge.

Cook’s note

Broccoli florets or snap peas can stand in for green beans; keep the same 4-minute blister, then proceed.

What to serve with it

Rice, quinoa, or crusty bread to catch the glaze. Keep sides plain; the pan sauce is the flavor.

Make-ahead and leftovers

Cook the beans and mix the glaze ahead. Sear the salmon last minute. Leftover salmon keeps 2 days; eat cold on a salad or flake into rice. Reheating past 130°F dries it out.

Troubleshooting

Glaze watery? It never hit a hard simmer around the fish. Glaze bitter? The honey burned — lower the heat and do not pour it over cold pan spots. Salmon sticking? The fillet was wet or you moved it too soon. Pat dry and wait for the crust.
