Meatballs do not need a simmering pot of sauce on a weeknight. These roast on a sheet pan with sweet bell peppers and onion so the drippings season the vegetables while the meatballs brown on all sides without babysitting a skillet.
A quick balsamic-tomato glaze goes on at the end for sticky edges. Dinner is ready in about 35 minutes with almost no cleanup if you line the pan.
Ingredients
Meatballs
- 1 lb (454 g) ground beef (85–90% lean) or a beef-pork mix
- ⅓ cup (35 g) panko breadcrumbs
- ¼ cup (25 g) grated Parmesan
- 1 large egg
- 2 garlic cloves, minced
- 1 tsp Italian seasoning
- ¾ tsp kosher salt
- ½ tsp black pepper
- 2 Tbsp chopped parsley
Vegetables and glaze
- 2 bell peppers (any color), cut into 1-inch strips (about 3 cups / 300 g)
- 1 large red onion, cut into ¾-inch wedges
- 2 Tbsp (30 ml) olive oil
- ½ tsp kosher salt
- ¼ tsp black pepper
- 3 Tbsp (45 ml) marinara or tomato sauce
- 1 Tbsp (15 ml) balsamic vinegar
- 1 tsp honey or sugar
- Fresh basil or parsley, for serving
- Cooked pasta, polenta, or crusty bread, optional
Method
- Heat oven to 425°F (220°C). Line a rimmed half sheet pan with foil or parchment.
- Mix meatball ingredients gently until just combined. Roll into 16 golf-ball-size meatballs (about 1½ inches).
- Toss peppers and onion on the pan with olive oil, ½ tsp salt, and ¼ tsp pepper. Nestle meatballs among the vegetables in a single layer.
- Roast 15 minutes.
- Stir glaze: marinara, balsamic, and honey. Brush meatballs; toss vegetables in pan juices. Roast 5–8 minutes more until meatballs reach 160°F (71°C) and peppers are tender with charred edges.
- Rest 3 minutes. Scatter herbs. Serve over pasta, polenta, or with bread.
Cook's note
Do not overmix the meat — that is how you get dense meatballs. If using all beef, 85% lean stays juicier than extra-lean on a hot sheet pan.
What to serve with it
Buttered orzo, garlic bread, or a bagged Caesar salad. Extra warm marinara on the side for dipping makes it feel like a full Italian-American plate.
Make-ahead and leftovers
Shape meatballs up to 1 day ahead; refrigerate covered. Leftovers keep 4 days; reheat at 350°F (175°C) for 10–12 minutes. Freeze raw or cooked meatballs up to 2 months.
Troubleshooting
**Meatballs dry?** Overcooked or too lean — pull at 160°F and use 85% beef. **Vegetables soggy?** Pan was crowded; use two pans or cut larger pieces. **Pale glaze?** Brush again in the last 2 minutes under the broiler for 1 minute, watching closely.
