Nachos for dinner is not cheating if you build them right. Seasoned ground beef, black beans, and two layers of melted cheese turn a sheet pan of chips into a real meal, and the fresh toppings — pico de gallo, avocado, cilantro, and a squeeze of lime — make it taste bright rather than heavy.

The secret to great sheet pan nachos is layering. One thick pile leaves the top soggy and the bottom chips bare and dry. Two thinner layers, each with beef and cheese, mean every chip gets something on it. The whole thing takes about 25 minutes and one skillet plus one sheet pan.
Prep: 10 min · Cook: 15 min · Total: 25 min · Serves: 4
Ingredients
Beef and beans
- 1 Tbsp (15 ml) neutral oil
- 1 lb (454 g) 85% lean ground beef
- 1/2 medium onion, finely diced
- 2 garlic cloves, minced
- 1 Tbsp (8 g) chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp dried oregano
- 3/4 tsp kosher salt
- 1 Tbsp (16 g) tomato paste
- 1/3 cup (80 ml) water
- 1 can (15 oz / 425 g) black beans, drained and rinsed
Nachos
- 10–12 oz (285–340 g) sturdy tortilla chips
- 2 cups (8 oz / 225 g) shredded Monterey Jack or Mexican-blend cheese
- 1 cup (4 oz / 115 g) shredded sharp cheddar
- 1/4 cup (35 g) pickled jalapeño slices, optional
Toppings
- 1 cup (180 g) pico de gallo or diced tomatoes
- 1 ripe avocado, diced
- 1/2 cup (120 g) sour cream or Mexican crema
- 1/4 cup (10 g) chopped cilantro
- 2 scallions, sliced
- Lime wedges and hot sauce
Method
- Heat the oven to 400°F (200°C) with a rack in the middle. Line a rimmed half sheet pan (18 x 13 inches) with foil or parchment for easy cleanup.
- Heat the oil in a 12-inch skillet over medium-high heat. Add the beef and onion and cook 6–7 minutes, breaking up the meat, until browned. Spoon off excess fat.
- Stir in the garlic, chili powder, cumin, smoked paprika, oregano, salt, and tomato paste and cook 1 minute. Add the water and black beans and simmer 2 minutes until saucy but not wet. Taste for salt.
- Spread half the chips on the sheet pan in a slightly overlapping layer. Top with half the beef mixture, half the Jack, and half the cheddar.
- Add the remaining chips on top, then the rest of the beef, cheese, and jalapeños.
- Bake 7–10 minutes, until the cheese is fully melted and bubbling and the chip edges are lightly toasted.
- Top with pico de gallo, avocado, dollops of sour cream, cilantro, and scallions. Serve right on the pan with lime wedges and hot sauce.
Cook's note
Grate your own cheese if you can. Pre-shredded cheese is coated with anti-caking powder that keeps it from melting as smoothly, and nachos are all about that gooey melt. Monterey Jack melts the best; cheddar brings the flavor.
Swaps and variations
- Protein: Ground turkey, shredded rotisserie chicken tossed with the spices, or leftover carne asada.
- Vegetarian: Use two cans of black or pinto beans and a cup of corn instead of beef.
- Queso-style: Melt 1 cup shredded cheese with 1/2 cup evaporated milk in a small pot and drizzle over before baking.
- Lighter: Use baked chips and add extra beans, lettuce, and pico.
What to serve with it
Nachos are a complete dinner, but a simple side salad of romaine, lime, and a little salt balances the richness. Pair with Mexican-style street corn or fruit for kids.
Storage and reheating
Nachos are best eaten fresh. If you expect leftovers, store the beef mixture separately (up to 4 days refrigerated, or 3 months frozen) and build a fresh pan when you need it — it takes 10 minutes. Leftover assembled nachos can be re-crisped on a sheet pan at 375°F for 5 minutes, but toppings like avocado and sour cream should be scraped off first.
Troubleshooting
- Soggy chips? The beef mixture was too wet, or toppings went on before baking. Simmer the beef until saucy, not soupy, and add cold toppings after the oven.
- Cheese not melting evenly? Spread it in an even layer and avoid big clumps. Use freshly grated cheese.
- Chips burning at the edges? Your oven runs hot; lower to 375°F or move the pan up a rack.
FAQ
What chips work best for sheet pan nachos?
Thick, restaurant-style tortilla chips that can hold weight. Thin chips break and go soggy.
Can I make nachos ahead for a party?
Make the beef mixture and chop toppings ahead, then assemble and bake right before serving.
How do I keep nachos warm?
Leave the pan in a 200°F oven for up to 15 minutes before adding cold toppings.
