These bowls borrow bulgogi’s sweet-salty profile without a long marinade. Ground beef browns fast; soy, brown sugar, garlic, and sesame coat it in the same skillet.

Use leftover or microwave rice to keep this dinner around 20 minutes of active cooking.
Ingredients
- Soy sauce; brown sugar; sesame oil; gochujang or sriracha
- Rice vinegar; pepper; neutral oil; 1 lb ground beef
- Onion; garlic; ginger; green onions; sesame seeds
- Cooked rice; cucumber; shredded carrots; eggs; kimchi optional
Method
- Whisk soy, sugar, sesame oil, chili sauce, vinegar, and pepper.
- Brown beef and onion; drain excess fat.
- Add garlic, ginger, and green onion whites for 30–45 seconds.
- Add sauce and simmer 2–3 minutes until glossy; finish with sesame and green onion greens.
- Serve over rice with cucumber, carrots, egg, and kimchi.
Cook’s note
Gochujang brings fermented depth; sriracha works too. Add pepper flakes if skipping both.
What to serve
Steamed broccoli, broccoli slaw, garlic spinach, and microwave rice.
Make-ahead
Beef keeps 4 days and freezes 2 months. Pack rice and toppings separately.
Troubleshooting
Balance too-sweet sauce with soy and vinegar. Add rice for salt. Drain beef for less greasy bowls.
